Storage of chanterelle in modules

It is essential to quickly cool the chanterelles as soon as possible after picking to ensure good storage. The storage temperature should be between 1 and 2°C.
If the chanterelles had to be picked in the rain, especially after heavy rains, it is preferable to let them dry slightly in a cold room to avoid storing mushrooms that are too spongy (the fact of being gorged with water increases their respiration). It is preferable to favor, for storage in modules, chanterelles harvested in dry weather.
Take care not to go below 1% oxygen in the modules; to do this, ensure regular monitoring of gas levels, especially at the beginning of storage.
